Managing a Healthy Daily Diet on a Limited Budget
Mom's Meatloaf
Just like mom used to make - only healthier! This is another quick, easy recipe that is economical. As a note, leaner beef will equal less calories, fat - and less shrinking of the meatloaf.
Simply mix 2 pounds of lean ground beef with 12 crushed saltine crackers, and salt and pepper based on your personal taste preference.
Add 2 slightly beaten eggs and combine mixture well.
Tranfser to a pan sprayed with cooking spray to prevent sticking. Press meat tightly into pan. Top with a thin layer of ketchup, then add slices of bell pepper and onions. Bake until juices run clear - about 45 minutes in a preheated 375 degree oven.
The ketchup on top will create a tasty glaze, but take care not to use too much ketchup or your will end up with a soupy meatloaf. Just a thin layer will suffice.
