Peasant Bread - Recipe makes 1 generous loaf.
This coarse bread has a rustic taste and is reminiscent of medieval breads fired in open ovens, the bread cooked over wood. Our recipe for Peasant Bread is ultra easy to prepare and ultra delicious. It's also healthy and inexpensive to make.
Simply dissolve the yeast in the warm water. Next, combine the flour, salt and sugar in a large bowl and make a well in the center. Pour in yeast mixture. Combine all the ingredients using a wooden paddle and then work with the mixture using your hands to form a soft ball.
Using a board that has been lightly floured, knead the dough for five minutes. Dust the top with flour, then cover with a clean towel, allowing the dough to rise until doubled in size (about 1 to 1 1/2 hours). Transfer to baking sheet or pan. Cut vertical slants into the top of the bread.
Bake in a preheated 425 degree oven for about 45-50 minutes, or until golden brown. Remove and allow to cool completely before slicing. Entire Peasant Bread recipe contains about 1,600 calories.

- 1 package of yeast + 2 cups of warm water
- 3 1/2 to 4 cups of all purpose flour
- 1/8 teaspoon of salt
