Skinny Hashbrowns, Eggs & Bacon
Only 15 minutes and dinner is on the table. Prepare your eggs and bacon as you normally would. To prepare hashbrowns, use a grater and shred potatoes which have been peeled and washed.
Carefully add a stack of shredded potatoes to a Tablespoon of olive oil. Cook until golden on one side, flip carefully, then cook until the other side is golden brown. Be sure to salt and pepper the hashbrowns to suit your personal preference.
The added oil is the Calorie Factor where hashbrowns are concerned. To save fat and calories, cooking spray may be used rather than olive oil.
