Managing a Healthy Daily Diet on a Limited Budget
CAKE CREATIONS ON A BUDGET
When baking, rather than adding fat to the recipe in the form of oil or shortening, experiment with mashed and dried fruits, as well as applesauce and light sour cream. When we prepare a commercially packaged cake mix, we always omit the oil and add healthier ingredients that compliment the flavor of the particular cake we're baking. And we always receive so many compliments regarding the wonderful flavors we've created.
Here are a few combinations that work very well. Rather than oil or shortening or butter or margarine, try adding the following healthier ingredients:
Banana Cake Mix: add 1 cup of mashed banana + 1 teaspoon of banana extract.
White Cake Mix: add 1 cup of light sour cream + 1 Tablespoon of vanilla extract.
Yellow Cake Mix: add 1 cup of light sour cream OR unsweetened applesauce + 1 Tablespoon of vanilla extract & 1 Tablespoon of rum extract. In addition, add 1/2 cup of chopped pecans to the batter.
Chocolate Cake Mix: add 1 cup of mashed cherries OR 1/2 cup of thoroughly-mashed dates OR 1 cup of light sour cream + 1 Tablespoon of powdered cocoa. A lighter frosting for the cake includes spreading marshmallow crème between the layers and topping with a chocolate 7-Minute frosting that is low in calories
and fat. It also takes much less time than 7 minutes to create. Simply beat 2 egg whites + 1/2 teaspoon of cream of tartar until stiff peaks form (takes about 2 minutes when a cold bowl is used). Next, slowly add 1/2 to 1 cup of Splenda - depending upon how sweet you like your frosting. Also slowly add 1/2 cup of cocoa powder and a shot of vanilla extract. Your cake will look like a heavenly creation and you'll feel like a Diet Angel in the process.
Coconut Cake Mix: add 1/2 cup of WHIPPED cream cheese + 1 Tablespoon of coconut extract.
Pineapple Cake Mix: add 1 cup of crushed pineapple + 1/2 cup of light sour cream + 1 Tablespoon of vanilla extract.
Cherry Cake Mix: add 1 cup of mashed cherries or berries + 1 Tablespoon of vanilla extract.
Strawberry Cake Mix: add 1 cup of mashed strawberries + 1 teaspoon of strawberry extract.
French Vanilla Cake Mix: add 1 cup of light sour cream + 1 Tablespoon of rootbeer extract.
You can also create lower calorie, healthier stand-alone cakes without frosting that is high in fat and calories. Here are a few of our favorites. To the basic mix, add the following:
Pineapple Cake Mix : add 1 cup of crushed pineapple, 1/4 cup of chopped jarred cherries, 1/4 cup of chopped pecans or walnuts, 1 teaspoon of rum extract and 2 eggs. Also add the amount of water as indicated on the cake box mix and bake as directed. Allow cake to cool. Sprinkle with a bit of light or dark brown
sugar.
Chocolate Cake Mix: add 1/2 cup of light sour cream, 1/2 cup of dark chocolate morsels, 1 cup of frozen cherries that have been thawed, 1/4 cup of chopped pecans, and 2 eggs. Also add the amount of water as indicated on the cake box mix and bake as directed. Allow cake to cool. Sprinkle with a bit of powdered
sugar.
Carrot Cake Mix: add 1 cup of shredded carrots, 1/2 cup of WHIPPED cream cheese, 1/4 cup of chopped pecans or walnuts, 1 Tablespoon of vanilla extract, 1 Tablespoon of butter flavoring, and 2 eggs. Also add the amount of water as indicated on the cake box mix and bake as directed. Allow cake to cool. Sprinkle
with a bit of powdered sugar.
