Quick, Easy, Inexpensive Burrito Recipes
Our lower calorie recipe for burritos is very easy to prepare and very inexpensive.
While our simple burrito recipe uses chili, you can also use canned beans that have been rinsed, then seasoned with a bit of chili powder OR you can use refried beans OR better yet, the next time you prepare a pot of red beans and cornbread, save 1 cup of the beans for burritos that you will make later in the week.
As a note, other ingredients that can jazz-up the beans include: picante sauce, salsa, hot sauce, chopped jalapeno peppers, ground cumin, garlic salt, cilantro, onion.
Simple Recipe for Lower Calorie Chili Burritos
6 flour tortilla shells (80 calories each)
cooking spray
One 15-ounce can of lean chili (500 calories total)
3 slices of skim mozzarella cheese (50 calories each)
Spray the tortillas with cooking spray and cook until golden brown on the stove top using a deep pan. Remove, then add chili to the pan. Cook until bubbly, then top with cheese which should melt quickly. Stir to incorporate well.
Spoon mixture into each of the tortillas to one side, then fold into burritos. Add any of the following to the chili mixture before folding if desired: salsa, chopped onions, jalapeno peppers.
You can also return the folded burritos to the stove and cook until shell reaches a crispy stage. Or if you prefer, you can forego the stove for the shells and simply heat them in the microwave.
Each burrito contains about 170 calories and is ultra filling. Serve with light sour cream or salsa if desired. A side of Mexican rice also compliments the burritos well.
