There isn't much difference in the price of light dairy options over regular dairy products. Skim and low fat can save you calories and of course, fat and tends to contain more calcium than their 'regular' dairy counterparts.
One area that we've noticed which has shot to the moon is cheese. It's almost doubled the price in our area. Bags of shredded cheese have actually more than doubled in price. Obviously, a good option would be to purchase block cheese and shred at home.
If you use cheese sauce for some foods, look into the jarred cheese dips found in the chip isle. Many contain a surprisingly low number of calories considering they are cheesy. And given the price of cheese, at this point they are much cheaper. And a little cheese sauce goes a long way. That broccoli that used to get smothered in 100 calories worth of homemade cheese sauce can get topped for about 30 to 40 calories and still contain a delicious cheesy flavor.
This cheesy dipping sauce also compliments rice very well, and a meal can be prepared in a flash with the addition of a few sauteed veggies and some chopped grilled chicken.
