Easy Tip for Quicker Squash Casserole Recipe: Use the steamer-type packages of yellow summer squash. They are about the perfect size for squash casserole and make preparation so easy. Two pounds of yellow squash equals about 5 smaller yellow squash, or 4 large squash. Be sure to remove and discard any large seeds. We like to mash the cooked squash before adding to the following Squash Casserole Recipes.

Easy Squash Casserole Recipe #1

2 pounds of yellow summer squash cut into 1-inch chunks - cooked & drained
1 stick of saltine crackers, crumbled
1 can of evaporated skim milk, low fat variety
1/2 cup of margarine (we used a reduced calorie margarine for a total of 150 calories)
1/2 cup of chopped onion OR a medley mix of bell pepper, celery & onions(32 calories)
1/4 cup of white granulated sugar OR use Splenda
Cooking Spray

How to Prepare this Easy Squash Casserole Recipe

Add the margarine to a deep, non-stick skillet and allow to melt. Add the chopped onions and allow them to clarify. Add the crackers and coat well with the melted margarine. Add the canned milk. Add sugar; add cooked squash.

Spray a casserole dish with non-stick cooking spray and transfer squash mixture into the dish. Bake in a preheated 425º oven for about 35 to 40 minutes - until casserole is golden brown on top. Serve while warm. Re-heats very well.

This easy squash casserole recipe makes ten servings which contain about 100 calories each.

1 cup of saltine crackers, crumbled (about 300 calories)
1/2 cup of skim milk (about 50 calories)

1/2 cup of chopped onion (32 calories)
salt  + pepper to suit personal taste (we used 1 teaspoon in our recipe)
1 cup of low fat cheddar cheese, shredded (optional)

Add the margarine to a deep, non-stick skillet and allow to melt. Add the chopped onions and allow them to clarify. Add the squash, the salt and pepper - and stir so that margarine coats all the ingredients. Now stir in the crumbled crackers.

1/2 cup of margarine (we used a reduced calorie margarine for a total of 150 calories)
1/2 cup of chopped onion + 1/4 cup of any variety of bell peppers, chopped
salt  + pepper to suit personal taste (we used 1 teaspoon in our recipe)
1 cup of low fat cheddar cheese, shredded (optional)
2 Tablespoons of Real Bacon Bits

How to Prepare this Easy Squash Casserole Recipe

Add the margarine to a deep, non-stick skillet and allow to melt. Add the chopped onions and the bell pepper, and allow them to clarify. Add the squash, the bacon bits and the salt and pepper - and stir so that margarine coats all the ingredients. Now stir in the crumbled crackers.

Spray a casserole dish with non-stick cooking spray and transfer squash mixture into the dish. Add the vinegar to the milk and stir to create a mock version of buttermilk which contains a lot less calories without sacrificing flavor. Pour 'buttermilk' over the squash mixture as evenly as possible, then top with the shredded cheese. Bake in a preheated 350º oven for about 20 to 25 minutes - until casserole is bubbly. Serve while warm.
