Thin Thin - Still Naughty But Healthier Recipes

Cherry Purses

A reduced calorie, reduced fat recipe.

The Recipe Ingredients
1 cup of Splenda-based brown sugar
1 cup of Splenda (or use 1/2 sugar and 1/2 Splenda mix)
1 cup of light reduced calorie margarine
1/2 teaspoon of salt
3 Tablespoons of Skim Milk to which 1 teaspoon of white vinegar has been added (or use 3 Tablespoons of fat reduced Buttermilk)
5 cups of all purpose flour
1 teaspoon of baking soda + 1 teaspoon of baking powder
1/4 teaspoon of ground nutmeg

You will also need 2 cans of light cherry pie filling prepared with Splenda which will be the filling for the Cherry Purses.

Combine the above ingredients. Roll dough into a log and refrigerate until firm - about 1 hour. Remove and slice off rounds. Using a rolling pin, roll out circles and place a spoon or two of the cherry pie filling to one side of the dough. Fold over dough as you would a soft taco shell.  Crimp edges with a fork. Dusting the tines of the fork in flour will help prevent sticking issues.

Bake in a 350° preheated oven on a cookie sheet that has been sprayed with cooking spray. Bake until cookies are golden brown. Remove and allow to cool completely. Filling will be extremely hot until cookies finish cooling.

This recipe makes a mountains of cookies and works well for large groups or school-related events. Our daughter-in-law is a huge fan of this light cookie recipe.
