Chicken Cacciatore Recipe

A reduced calorie, reduced fat recipe.

The Recipe Ingredients
Chicken pieces - washed with skin removed
1/4 cup of olive oil
1 sliced onion
2 1/2 cups of diced tomatoes
1/2 teaspoon of salt
1/8 teaspoon of cracked pepper

Brown chicken pieces in oil and remove. Place on paper towel to absorb excess fat. Drain excess fat from pan, then return chicken to pan. Add remaining ingredients and cook until chicken is tender - about 45 minutes.

Serve over spaghetti or noodles.
