Thin Thin - Still Naughty But Healthier Recipes
Chicken Enchilada Pie Recipe
A reduced calorie, reduced fat recipe.
The Recipe Ingredients
2 cups of boned chicken, no skin - lean meat only
1 can of cream of low fat mushroom soup (do not add water)
- 1 can of cream of chicken soup - low fat (do not add water)
- 1 small can of green chilies
- 1 Tablespoon of ground chili powder
- 1/2 minced onion
- 1/8 teaspoon of garlic powder
1/4 teaspoon black pepper
1/4 teaspoon of Tabasco sauce
1 can of chicken broth
4 cups of corn chips (if available, the light variety)
8 ounces of skim mozzarella cheese, grated
Combine chicken with soups, chilies, spices, onion, Tabasco and chicken broth. Line a 3 quart casserole dish with 2 cups of the corn chips and spread half of the chicken mixture over the chips. Add 4 ounces of the grated cheese. Repeat - ending with the cheese. Bake in a 350° preheated oven for about 30 minutes or until hot and bubbly.
