Mamaw Gooding's Porcupine Meatballs, a family recipe
A reduced calorie, reduced fat recipe.
- This recipe was handed down to me by my mother and was a family favorite when she was a little girl. With six kids and a depression to deal with - as well as a son who served in WW2, both money and patience were tight.

- I have made a few modifications to add more healthy values. In addition, my grandmother made use of uncooked rice and if you choose to go that route, I'd highly advice cooking the rice 1/2 way done before adding it to the meatballs.

- The Recipe Ingredients
- Combine the following ingredients:
- 1 cup of Minute Rice, uncooked
- 1 pound of extra lean ground beef
- 1 1/2 teaspoon of salt
- 1/2 teaspoon of pepper
- 1 small minced onion
- 1/4 cup of olive oil
- 1 can of tomato soup
- 1 can of hot water

- Combine rice, ground beef, salt, pepper and onion. Shape into about 1 dozen meatballs. Brown in the olive oil using a thick pan or skillet. Add tomato soup and water.

- Cover and reduce heat. Cook until done. Rice should stick out of the sides of the meatballs to resemble a porcupine's quills. Makes 6 generous servings.
