Tickled Beets - Holiday Appetizer Recipes for
Dieters
A favorite at our house during the holidays is sweet beets. Because
sugar is a Diet Killer, we've tickled ours with Splenda.
We recommend the tiny baby beets - about 1 inch in diameter.
As a note, beets are ultra easy to grow. In most areas,
plant just before autumn makes an appearance to ensure
a crop before the holidays arrive.
You will need the following ingredients for this
diet-wise recipe:
1 can of beets in their natural juice OR cooked garden
beets either tiny rounds OR sliced
1/2 to 1 cup of Splenda - depending upon how sweet
you like your beets
1/4 to 1/2 cup of vinegar - as with the sweetness
agent, adjust the sour agent to suit your personal
taste
Simply mix the vinegar into the beets, then stir
in the Splenda. Heat on the stove until hot, then cool
and pour into a pretty glass jar. Seal to lock out odors
and store in refrigerator. Although mixture keeps well,
we do not recommend keeping Tickled Beets longer than
a few days in the fridge. Generally, they are all eaten
on the first day because they are just too good.
