Popeyes - Holiday Appetizer Recipes for Dieters
Puff pastry is a marvel and can make any cook look like a professional.
Although puff pastry can be a bit pricey in calories,
our Popeyes are created with just a smidgen to keep
calories low without losing the wow factor.
You will need the following ingredients for this
diet-wise recipe:
Puff Pastry (generally 18 serving per package for
the 2-sheet variety)
4 cups of cooked, boned and cubed white chicken breast
(do not use canned)
1 cup of shredded low fat mozzarella cheese
2 cups of fresh spinach, chopped
2 cups of diced onion - any variety
2 cups of sliced or diced mushrooms - any variety
Non-Stick cooking spray
Salt & Pepper to suit personal taste
1 egg, beaten
Saute spinach, mushrooms and onions in a pan using
cooking spray until golden. Remove and add chicken and
cheese. Spoon a bit of the mixture into a square piece
of puff pastry taking care to situate the mixture on
one side.
Fold into a triangle and crimp using a fork dusted
in a bit of flour. Brush lightly with beaten egg. Bake
as directed on puff pastry package. Sprinkle tops of
Popeyes with a bit of your favorite seasonings OR parmesan
cheese before baking if desired.
