Holiday Relish Tray - Holiday Appetizers for Dieters
A wide variety of healthy foods arranged on a festive tray for

Mushrooms - several varieties
Radishes - Slice and 'X' on one end and soak in ice
water until radishes pop open. Beautiful. Simple.
Broccoli Trees, Brussel Sprouts (Steamed & Cooled),
Cauliflower Trees
Cherry Tomatoes - stuff with a bit of low fat, ready-made
pimento cheese to dazzle guests.
Baby Carrots - Place on a bed of shredded carrots
or radishes. Playing with color can produce a beautiful
arrangement.
Mixed Roasted Veggies - Roast the following vegetables
on a baking sheet in your oven. Brush veggies with oil
and season with your favorite spices before popping
into a preheated 375-degree oven: mushroom caps, brussel
sprouts, eggplant wedges, pumpkin wedges, winter squash
wedges, potato wedges, sweet potato wedges.
Dips and sauces should be as close to basic as possible
without being loaded down with high calorie, high fat
ingredients. All the healthy values in the above foods
can be drowned in the dip or sauce. Try the following
for a feel-good-diet experience to compliment your healthy
relish tray:
Light Salad Dressing such as walnut-raspberry
Opt for low fat yogurt dolled up with your favorite
seasonings
Homemade cranberry sauce prepared with Splenda rather
than sugar makes for a tangy, delicious dip.
Chinese sauces that are low in calories make excellent
veggie dips.
Cream Cheese dips - prepare using low fat cream cheese,
skim milk and your favorite seasonings. Or, try adding
any of the finely chopped vegetables into the cream
cheese mixture: sun-dried tomatoes, black olives, green
olives, chives or dried fruits - such as dried cranberries.
