Pumpkin Coach Pie - Holiday Dessert Recipes for

So simple that even a Fairy Godmother can prepare without a wand.
Simply purchase ready-made dough and fill with the following
ingredients. Bake in a preheated oven at 350-degrees
for about 40 minutes - or until done. Be sure to cover
the edges of the pie crust with tin foil that has been
sprayed with a thin layer of cooking spray. The cooking
spray will prevent the foil from sticking to the crust
and the foil will prevent the crust from over-browning.
Although Splenda is a key ingredient in keeping this
pumpkin pie low in calories, if you prefer sugar decrease
to 3/4 cup. Keep in mind that sugar contains 800 calories
per cup. Splenda is preferred over other sugar substitutes
for baking because it can stand up against heat while
retaining sweetness.
You will need the following ingredients for this
diet-wise recipe:
1 small can of pumpkin
1 cup (or less depending upon your level of preferred
sweetness) of Splenda
1 can of skim cream (generally found in the coffee
isle)
1 Tablespoon of pumpkin pie spice
1 Tablespoon of ground cinnamon
2 eggs, slightly beaten
Dash of salt
1 prepared pie crust
Mix all the ingredients except the pie crust. You'll
want to bake the pie in that! To reduce the calories
in a prepared pie crust, remove thawed dough from its
foil pan and roll out into a thinner dough. Use the
dough to create another pie.
