Deck the Halls Cookies - Holiday Dessert Recipes for
Dieters
Coconut reminds me of a snow-covered outdoors and this diet wise
recipe brings a little snow to the holiday table. And
a lot of cheer too - because these cookies are delicious.
You will need the following ingredients for this
diet-wise recipe:
1 1/2 cups of flaked coconut
2 egg whites
1 teaspoon of vanilla extract
1/2 cup of sugar (yes, real sugar)
Cooking Spray
Beat egg whites and vanilla to soft-peak stage and slowly incorporate
vanilla. Fold in coconut, then using a teaspoon drop
cookies onto a cooking sheet sprayed with cooking spray
to prevent sticking. Bake at 325-degrees in a preheated
oven for about 15-20 minutes - or until lightly browned.
Cool completely. Sprinkle with holiday sprinkles OR
colored sugar if desired. Produces about 2 1/2 dozen cookies
for about 40 calories each.
