Hide the Eggnog Pie - Holiday Dessert Recipes for
Dieters
Bells are ringing, halls are being decked and it's time to egg
the nog by knocking down the calorie and fat content.
Diet or no diet - what are the holidays without a nip
of nog?
Our simple recipe is not only ultra easy to make
and light on the waistline, even the kiddies can help
put it together. The Eggnog creamer can be found in
the dairy isle during the holidays, along with many
other holiday concoctions such as Gingerbread Spice.
To make another flavor of pie - such as the Gingerbread
Spice, simply replace one creamer for the other. As
a note, go easy on the ground nutmeg. In large doses,
nutmeg can prove lethal. Seriously.
You will need the following ingredients for this
diet-wise recipe:
1 small container of thawed FREE Cool Whip (15 calories
per serving)
1/8th teaspoon of ground nutmeg - plus a dash for
the top of the pie
1/4 cup of Eggnog dairy creamer (found in the dairy
isle during the holidays)
1 teaspoon of vanilla extract (optional)
1/4 teaspoon of rum extract (optional)
1 graham cracker pie crust
GENTLY fold the extracts, the eggnog creamer and
the ground nutmeg into the Cool Whip. Transfer to graham
cracker pie crust and top with just a dash of nutmeg
and mint leaves, if desired. Or, decorate with tiny
candy canes. Pop into freezer and enjoy frozen OR into
the fridge until firm for a fluffy pie treat.
