Mini Cheesecakes - Holiday Dessert Recipes for
Dieters
Small Corningware rounds work perfectly for these delicious Mini
Cheesecakes. Arrange on a holiday tray to wow guests.
May be topped with a bit of strawberry preserves or
glaze OR the topping of your choice. We used a fresh
whole strawberry in our recipe below.
You will need the following ingredients for this
diet-wise recipe:
1 small container of whipped cream cheese (makes
about 4 Mini Cheesecakes)
2 eggs, slightly beaten
2 Tablespoons of Vanilla Extract OR the Extract of
your choice (lemon is divine + a bit of grated lemon
rind)
Graham Crackers, crushed (Use about 1 whole graham
cracker per Mini Cheesecake)
Margarine OR Butter
Splenda
Whole Fresh Strawberries (or the berry of your choice)
Sprinkle crushed crackers and a bit of Splenda into
one microwave-proof Corningware round. Next, pour on
1/2 teaspoon of melted margarine and press mixture slightly
so that it creates a flat crust on the bottom of the
round.
Combine cream cheese and eggs. Be sure to use whipped
cream cheese. Next, add vanilla - or the extract of
your choice. Spoon mixture into rounds. Microwave on
high for about 2 minutes OR bake in the oven until golden
at 350-degrees. Allow to cool and top with a beautiful
whole, fresh strawberry.
