Decadent Pecan Pie - Holiday Dessert Recipes for
Dieters
One of the most high calorie pies of the season is rich and delicious
pecan pie - and unfortunately, one of my favorite pies
- and perhaps yours, too. So we got to thinking, "How
can we create a pecan pie that's low in calories without
riddling the taste?" Naturally, there are those
pie crust calories - and those can be cut by simply
rolling the dough as thin as possible.
Then there are the nuts which go inside the pecan
pie. Well, without the nuts there wouldn't be a pecan
pie - so about the only way to cut the calories is to
use less nuts. We determined that could be accomplished
by using chopped pecans because chopped nuts go a bit
further than the halves.
And now, for the filling. Ah - that we can reduce
- although it resembles a fluffy, unique masterpiece.
Because pecan pie is going to be naturally high in calories
- if only due to the pie crust and pecans, reducing
the calories in the filling equals a whole lot less
calories.
How to: Simply fold the Cool Whip with the
pecans and vanilla and pour into a cooked pie crust.
Lightly drizzle with a bit of caramel sauce and/or chocolate
fudge sauce if desired - or both. Allow to chill, then
enjoy.
As a note, we did experiment with Splenda, eggs and
sugar-free syrups in an effort to produce the a-typical
pecan pie, but the end result was so terrible that even
our kitchen drain didn't want to digest the liquid.
And now for those tasty ingredients:
You will need the following ingredients for this
diet-wise recipe:
1 small container of Cool Whip FREE (15 calories
per serving)
1 cup of chopped pecans
1 teaspoon of vanilla extract
Caramel Sauce
1 prepared pie crust (either flour-based or graham
cracker crust)
