Mashed Spudwhackers - Holiday Dessert Recipes for
Dieters
Although homemade mashed potatoes take a bit to make,
it's just not the holidays with instant at the table.
Although instant will do in a pinch, these Mashed Spudwhackers
are guaranteed to put a smile on your guests' faces.
You will need the following ingredients for this
diet-wise recipe:
3 pounds of peeled Idaho potatoes, washed, peeled,
quartered and placed into a pot of cold water that rises
1 inch over the potatoes
3 ounces of LIGHT cream cheese
Salt and Pepper to taste
1 cup of skim milk
1/4 cup of margarine
Cook potatoes until tender. Remove and drain off
excess water. Add remaining ingredients and whip with
a mixer until fluffy - but not to excess as potatoes
will liquefy and turn to a starchy soup.
