Medieval Porcupine Meatballs

Recipe will feed 4 hungry villagers generously for about 325 calories each
What a deliciously fun recipe! Meatballs that whimsically turn into
porcupines – or almost. As the meat cooks this tasty goody, the rice pokes
thru.
- Ingredients
for Low Fat, Low Calorie Recipe
- 1 Pound of Extra Lean Beef OR Turkey
- 10 Saltine Crackers
- 1 Cup of Minute Rice, uncooked
- 1 Hen Egg
- Salt & Pepper to the Personal Taste
- ½ Cup of Water
- 4 Tablespoons of Peach Jam
Crumble up crackers. One good way is to place them in a plastic bag
from market village & allow small tots to pounce on them a bit.
Mix crushed crackers, salt, pepper, egg, beef & rice.
Form meatballs.
Place into non-stick skillet with water, cooking covered for about 20 minutes
or until done. Drain off unwanted meat juices. Add peach jam or preserves
to pot for a sweet taste.
Rice will stick out of side of meatballs like porcupine quills. May’st
be drizzled with a bit more of melted jam.
Serve to King with bowl & licorice pipe.
