Medieval Tomato Boats

Serves 4 generously for about 125 calories
- Ingredients
for Low Fat, Low Calorie Recipe
- 4 Firm Tomatoes From the Neighbor’s Vine
- 2 Cups of Light Cottage Cheese
- 5 Large, Pitted Black Olives, Sliced (or 2 Tablespoons)
- 10 Small Olives With Pimento, Sliced (or 2 Tablespoons)
- 2 Tablespoons Hulled Sunflower or Pumpkin Seeds
- 4 Dashes of Salt
- Cracked Black Pepper
- Poppy Seeds (Optional)

Hull out tomatoes to form boats for cottage cheese. Reserve contents
& store hulled out contents in a sealed container for future use such as
juice or soup.
Dash insides of tomatoes with salt to suit the taste. Combine in bowl
the cheese, olives, seeds & pepper. Spoon into tomato boats. Sprinkle
with a dash of poppy seeds, if desired.
