Nantucket Chicken Salad

Nantucket Chicken Salad - take 1 small package of chicken tenders and boil in water until tender.  Remove chicken and allow to cool completely.  Using your fingers, crumble chicken until it reaches your desired texture.  Some people like their chicken very fine, others like it chunky.

Next, add 2 Tablespoons of LIGHT Mayo or Miracle Whip (it's so tangy-good!), salt and pepper.  Stir.  At this stage, the chicken salad will keep for about two days in a sealed container if you desire to enjoy it at a later date.

To finish up your Nantucket Chicken Salad, add 1 cored, chopped apple that has been misted with either lime or lemon juice, 1 Tablespoon of golden/brown raisins and 1 Tablespoon of chopped walnuts.  Mix and enjoy.

Serves 4 generously for about 150 calories each

4 Chicken Fillets OR Breasts

Lemon Pepper

Juice of 2 Lemons

Non-Stick Cooking Spray 

Wash chicken & pour lemon juice on.   Sprinkle heavily with lemon pepper.   Place on a pan sprayed with non-stick cooking spray.   Bake in preheated oven on 375 degrees for about 45 minutes, or until completely done.

2 Large Slices of Whole Grain Bread (80 calories each)

No Calorie Butter Spray

1 Slice of REAL Cheese (70 calories per slice)

1 Teaspoon Fat Free Honey Mustard

1 Thin Slice of Honey Ham (35 calories per slice)

Small Handful Sprouts PLUS ½ Tomato Sliced Thinly

Salt & Pepper

Pickle or Green Olive  

Spray bread with no calorie spray until well coated.   Place either inside toaster, or under broiler till top turns golden brown. Spread with honey mustard, add cheese, ham, sprouts & slices of tomato. Insert pickle slice or olive into Viceroy Sandwich with a pretty toothpick. Serves 1 for about 275 calories per serving.
