Low Fat Recipe Ingredients for Easy Low Fat Broccoli Cheese Soup

1/2 cup of hot skim milk

2 slices of any 70-calorie or less cheese (skim mozzarella works very well)

1/4 - 1/2 cup of chopped broccoli

A very simple recipe for a simply delicious diet-wise soup.

Optional: 1 teaspoon of salsa,  cracked pepper,  salt, if needed,  1/2 - 1  teaspoon of Parkay no calorie butter spray or your favorite low/no calorie butter.

Cut cheese into small strips and add to hot milk. Allow a few seconds for cheese to melt before adding broccoli and pepper. This recipe for broccoli cheese soup is just shy of 200 calories.  What a diet bargain!

Peasant Tater Soup Diet Recipe

Serves 4 extremely generously for about 150 calories each

4 Peeled Taters (Spuds), Washed & Patted Dry & Cubed

Salt & Large Cracked Pepper To the Personal Taste

1 Can of Lite Canned Evaporated Milk (Creamer)

¼ Teaspoon of Dried Parsley

1 Tablespoon of No Calorie Refrigerated Butter Spray 

Cook taters in ½ cup of water in microwave by placing a sheet of plastic wrap over top of bowl. Cook until taters are tender about 12-15 minutes.   Remove & smash with a tater masher. Blend if the desire a pureed soup. Add cream, salt, butter spray & parsley.   Stir & return to microwave & heat until warm. Top with cracked black pepper.   Serve with piping hot biscuits & fresh strawberries topped with lite whipped topping.   Be certain to account for additional calories in biscuits & berries.

Medieval Tapestry Soup

Serves 4 extremely generously for about 100 calories each

This is a hearty, winter soup that will take the chill out of the bones, tho it can be taken hot or cold.   Serve with a batch of warm crusty bread & a cup of home-made butterscotch pudding.

1 Golden Butternut Squash, Acorn Squash OR any Winter Variety of Squash

2 Cups of skim Milk

¼ Cup of No Calorie Butter Spray From the Fridge

2 ½ Teaspoons of Pumpkin Pie Spice (Or 1 Teaspoon Ground Cinnamon, ½ Teaspoon Allspice, ½ Teaspoon Ground Nutmeg, ½ Teaspoon Ground Ginger)

Dash of Salt

6 -12 Packets of No Calorie Sweetener (Sweetened to the Personal Taste)

Prepare golden squash in microwave by slicing in half, seeding, washing, then placing face down in about 1 inch of water in a microwave safe pan. Cover with heavy plastic. Cook on high for about 12-15 minutes, or until fork tender. When cooled, spoon out orange meat into thick non-stick pot that hath been coated with the butter spray.   Next, add spices & stir gently. Add salt & sugar. Add milk. Cook until smooth & warm. Sprinkle with a bit of cinnamon before serving.
