Sandbar Scones
Ingredients
- 3 Cups of
Flour
- 1 Teaspoon
of Baking Soda
- 1 Teaspoon
Baking Powder
- 2 Tablespoons
Grated Lemon Rind
- 12 Packets
of No Calorie Sweetener
- ½
Stick Margarine
- ¼
Cup Pecans, Chopped
- 1 ½
Cups of Skimmed Milk
- 1 ½
Teaspoons of White Vinegar
- 1 Hen Egg
– Small, Medium Or Large, Slightly Beaten
Gently mix flour, baking
soda, baking powder, lemon rind, nuts & sweetener. Add butter &
mix with fork till crumb-like.
Take one cup & mix
vinegar into milk to make buttermilk. Add to dry mix.
Knead on floured surface
& pat flat till scone dough reaches about an inch in thickness. Cut
into triangular shapes with knife dipped in water. Place on ungreased
cookie sheet & brush with egg that has been beaten slightly with a fork.
Bake about 12 minutes
at 425 degrees, or until scones reach desired doneness. Serve with jam, preserves,
or a smattering of raw honey.
Makes about 1 dozen
scones for about 175 calories per scone.
