Ox Tail Soup
Ingredients
- ½ Pound of Lean
Stew Meat – Chunks OR 1 Small Package of Ox Tails
- 1 Tablespoon Oil
- 3-5 Beef Bullion Cubes
- 3 Small Green Onions,
Chopped With Green Tops
- Salt & Black Pepper
- 3 Carrots, Peeled &
Cut Into Small Circles
- 3 Medium Potatoes, Peeled
& Cut Into Large Chunks
Step 1 – Using Ox Tails
- If using ox tails, sear in 1 Tablespoon of oil, then cook in boiling
water till done. Allow the pot to cool completely then place into the
refrigerator till fat rises to top of pot.
Remove fat & garner lean
meat from ox tails, then go to Step 3.
This will guarantee the rich taste
of ox tails without the fear of liquid fat in the pot.
Step 2 – Using Lean Stew
Meat – Cook salt & peppered meat in oil until golden brown. Go to Step
3.
Step 3 - Add 4-5 cups
tepid water. Bring to boil. Add bullion, onion, carrots & potatoes.
Cook until potatoes are tender.
Enjoy Ox Tail Soup with
hot biscuits, & fresh peaches bathed in lite cream with a dash of ginger,
but be certain to account for additional calories.
