Spray an eight inch pie plate with non-stick cooking spray. Press oatmeal pies into plate to form crust. Prepare pudding according to directions on package using skim milk. Add banana & strawberries. Pour pudding into pie shell. Sprinkle with coconut that hath been toasted under broiler until golden brown. Chill at least 1 hour before serving. Top with 1 Tablespoon of Lite whipped topping if desired.

Serves 6 generously for about 250 calories each

½ Cup of White Flour

½ Cup of Light Buttermilk

2 Tablespoons of Lemon Extract

1 Teaspoon of Lemon Peel, Finely Grated

½ Cup of REAL Sugar

½ Cup of No Calorie Refrigerated Butter Spray

½ Stick Margarine

15 Packets of No Calorie Sweetener

¾ Carton of Egg Substitute

1 Unbaked Pie Shell

If you are out of buttermilk, make the own by adding a spoon or two of vinegar to the skim milk. To the buttermilk add the lemon extract, the butter spray, the margarine, the egg substitute, the sweeteners & the lemon peel. Melt margarine & add to the bowl. Slowly incorporate the flour. Pour rich mixture into the unbaked pie shell. Bake in a 375 degree preheated oven for 5 minutes. Reduce heat to 350 degrees & bake until knife inserted in centre of pie comes out clean – about half an hour.
