½ Dozen Jalapeno Pickled Peppers, Seeded

2 Ounces of Monterey Jack Cheese Sliced Into Matchsticks

3 Sheets of Filo Dough (Found in Freezer Section of the Market)

Non-Stick Cooking Spray

Peppers must be drained, seeded & patted completely dry before stuffing with cheese.   Next, wrap pepper in Filo Dough.   Place on sheet lined with foil & sprayed with cooking spray.   Next, spray wrapped peppers with a bit of spray.   Sprinkle with salt. Bake in preheated oven at 400 degrees until golden.   Serve with a bit of light sour cream if desired. A milder pepper may’st be used.   Substitute Monterey Jack for Pepper Jack cheese.
