A Medieval Cottage of Cheese - Serves 4 generously for about 300 calories each

This hearty recipe is a boatload of fun! Creamy cottage cheese combined with its popular pineapple buddy is set off by the addition of the nutty flavor of sunflower seeds & the sweetness of golden raisins. A Cottage of Cheese is also fun to eat, the boat very attractive. Dive in! 

Low Fat Recipe Ingredients for Low Fat, Low Calorie Recipe

1 Medium Pineapple, Split & Scooped To Form Boat

(About 8 inches tall without stalk & about 6 inches around.)

1 Carton of Light Cottage Cheese

2 Tablespoons of Hulled Sunflower Seeds

½ Cup of Golden Raisins

Mix one cup of scooped pineapple with cottage cheese, sunflower seeds & golden raisins. Pour into pineapple boats.   Next, make 4 boats by slicing each boat in half. Use remaining pineapple in a shake, or sprinkle with some spices for a luscious dessert the following day.

Medieval Tomato Boats

Serves 4 generously for about 125 calories

Low Fat Recipe Ingredients for Low Fat, Low Calorie Recipe

4 Firm Tomatoes From the Neighbor’s Vine

2 Cups of Light Cottage Cheese

5 Large, Pitted Black Olives, Sliced (or 2 Tablespoons)

10 Small Olives With Pimento, Sliced (or 2 Tablespoons)

2 Tablespoons Hulled Sunflower or Pumpkin Seeds

4 Dashes of Salt

Cracked Black Pepper

Poppy Seeds (Optional)  

Hull out tomatoes to form boats for cottage cheese. Reserve contents & store hulled out contents in a sealed container for future use such as juice or soup.  

Dash insides of tomatoes with salt to suit the taste. Combine in bowl the cheese, olives, seeds & pepper. Spoon into tomato boats. Sprinkle with a dash of poppy seeds, if desired.
