A Medieval Cottage of Cheese

Serves 4 generously for about 300 calories each
This hearty recipe is a boatload of fun! Creamy cottage cheese combined
with its popular pineapple buddy is set off by the addition of the nutty flavor
of sunflower seeds & the sweetness of golden raisins.
A Cottage of Cheese is also fun to eat, the boat very attractive. Dive
in!
- Ingredients
for Low Fat, Low Calorie Recipe
- 1 Medium Pineapple, Split & Scooped To Form Boat
- (About 8 inches tall without stalk & about 6 inches around.)
- 1 Cartonof Light Cottage Cheese
- 2 Tablespoons of Hulled Sunflower Seeds
- ½ Cup of Golden Raisins
Mix one cup of scooped pineapple with cottage cheese, sunflower seeds &
golden raisins.
Pour into pineapple boats. Next, make 4 boats by slicing each boat
in half.
Use remaining pineapple in a shake, or sprinkle with some spices for a luscious
dessert the following day.
