- 2 Fresh Hen Eggs
- ½ Cup of Skimmed Milk
- 1 Teaspoon of REAL Vanilla Extract
- 12 Packets of No Calorie Sweetener
- 1 ½ Cups of White Flour
- 1 ½ Teaspoons of Baking Soda
- ½ Teaspoon of Crème of Tartar
- 1 Ripened Banana – Fully Mashed by the Tot’s Tootsie
- 1 Teaspoon of Ground Cinnamon
- ½ Cup of Light Brown Sugar
Preheat the oven to 350 degrees. Next, in the mixing bowl combine milk,
eggs, vanilla, sweetener, crème of tartar, baking soda & mashed banana.
Slowly incorporate the white flour – stirring the bowl of goodies with a gentle
hand, not a barbaric hand or the might produce 12 tough muffins. For this

Next, pour into muffin cups or a muffin pan. Fill about ½ full.
Be certain to dust the pans or cups with non stick cooking spray.
In a separate teensy bowl combine cinnamon & brown sugar. Sprinkle
mixture on top of muffin cups.
Transfer to muffin pan or cups & bake until golden – about 15 minutes.
Cherry Nut Muffins – Substitute ½ can of drained unsweetened cherries
for the cinnamon & the banana. Add ¼ cup of crushed pecans.
Chocolate Chip Muffins – Substitute ½ cup of powdered cocoa for the
cinnamon & banana. Add ½ cup of mini chips.
Pumpkin Pie Muffins – Substitute banana for ½ can of packed pumpkin.
Add ¼ teaspoon of ground ginger, ½ teaspoon of ground cloves
& ¼ teaspoon of ground nutmeg.
