Shrimp Boats - Low Calorie Recipe for Dieters
Ahoy, Diet Mateys! When you get in the mood to walk the Diet Plank, this seafaring low calorie recipe will bring you back to shore. Grab these ingredients next time you sail ashore to restock the larder:
Prepare shrimp in oven as directed on package. We like our shrimp extra crispy, so we tend to leave it in the oven a minute or two longer than directed. Just before shrimp is done, toss your slaw mix with about 1/4 jar of sweet & sour sauce + a dash or two of celery seeds. Pull shrimp out of oven and place a few into your hot dog bun. Top with the slaw mix. Yummy! Calorie Summary: We used the Seapack 'Firecracker' Shrimp and ditched the sauce packet. A serving of 10 shrimp equals 210 calories, so we place 5 shrimp (105 calories) in our bun. Our bun contained 110 calories. That's a total of about 215 calories. Add the slaw and total calories equal about 250 calories per Shrimp Boat. Taking Your Low Calorie Shrimp Boat Up A Diet Nautical Notch: The following suggestions refer to single servings, but they can easily be adjusted when serving more than one. - If you like your bun toasted, spray it with a bit of butter-flavored cooking spray, then toast in a toaster oven, or underneath a big-oven broiler, or on the stove top in a non-stick pan. - Adding a bit of dried fruit to the slaw mix will add nutritional value while keeping calories in check. Try a teaspoon of raisins (dark, golden), or a teaspoon of dried cranberries, a bit of dried pineapple or chopped dates. - Or, try adding a bit of fresh fruit to the slaw mix - such as a bit of chopped apple. - You can also try adding a bit of sunflower or pumpkin seeds to the slaw OR a couple of whole nuts. - A few poppy seeds or sesame seeds will create a new taste when added to the slaw mixture. - If you don't like sweet 'n sour sauce, substitute any of the following: light versions of your favorite salad dressings OR Miracle Whip LIGHT salad dressing. - If you don't like cabbage, try topping your Shrimp Boat with a bit of homemade tartar sauce.
