Healthy Tip #2 - Remove the skin and visible fat before preparation and save a plethora of calories and fat grams. One Tablespoon of chicken fat contains about 115 calories and 11 mg of cholesterol - something your healthy body doesn't need. If you must batter your chicken, the batter will still stick to the chicken without the skin when dipped in egg white which has been slightly beaten. And on that note, opting to leave off the batter is your healthiest strategy.
Healthy Tip #3 - Roast, boil, broil or grill to save fat grams and calories.
Healthy Tip #4 - A quick Mexican Stew can be made by adding 1 cup of raw cubed chicken to a pot sprayed with cooking spray. Add about 1/4 cup of chopped onion and allow the chicken to cook until the juices run clear.
Add about 2 cups of water and 3 chicken bullion cubes. Next, add either dried or fresh cilantro (chopped), adjusting the amount to suit your personal taste.
Next, add one envelope of your favorite taco seasoning mix and coat the meat well. Add 1 can of drained kidney beans OR pinto beans + 1 can of drained whole corn + 1 can of petite diced tomatoes. I also like to squeeze in just a bit of lime juice to add a unique zest that compliments the cilantro in the stew.
You can also choose to skip the chicken for a delicious vegetarian-style Mexican stew.
