Healthy Tips for Corn
Healthy Tip #1 - Create a tasty low-calorie corn pudding by using 1 can of cream-style corn, 1/2 cup of flour, 1/4 cup of Splenda (or sugar), 1 egg, 1 teaspoon of baking powder, dash of nutmeg, 1/4 teaspoon of ground cinnamon. Pour into a baking dish coated with cooking spray to prevent cooking and bake in preheated 375 degree oven until pudding is set in center and toothpick comes out clean - about 1/2 hour.
Healthy Tip #2 - Prepare a healthy corn and black bean salad. Start with one can of whole corn, 1 can of black beans. Thoroughly drain the corn, then the beans. I like to wash the beans in a strainer so that the beans look all new and shiny. You can either mix 1/4 to 1/2 cup of your favorite salsa with the corn and beans + 1/4 cup of chopped onions and enjoy OR heat the following, then add to the corn and bean mixture:
Using cooking spray, saute 1/4 cup of chopped onions in a small pan on the stove. Next, add 1/2 cup of your favorite salsa, plus 1/2 teaspoon of ground cumin, plus 1 teaspoon of chili powder, and finally 1/4 teaspoon of dried cilantro. If you opt to use fresh cilantro, simply cook it with the chopped onions.
Pour mixture on corn and beans, chill and enjoy. OR, if you prefer your Corn & Black Bean salad warm, add the corn and beans to the pan and heat before eating.
Healthy Tip #3 - Not all corn-on-the-cob was created equal. If you enjoy sweet corn, needless to say that when you bite into an ear of hard field corn, you'll be disappointed. Check with the produce manager before purchasing and if in doubt, ask him if you can test a nibblet from the cob before purchasing.
Healthy Tip #4 - Cooking corn on the cob can be a messy ordeal. Try opting for less stress by opting to use your microwave to cook the corn. About 5-7 minutes per ear will do. OR toss it onto the grill. The husks and silk are easily removed without leaving behind strands that at times, linger for days.
