
Low Calorie Muffin Recipe
Our low calorie muffin recipe can be prepared in minutes and adjusted to suit anyone's taste. Only 125 calories per generous muffin!
Use the following ingredients to create a basic vanilla muffin, then add your favorite ingredients to take your muffin to another level. Dried fruits and nuts work wonderfully well.
You can also save calories by substituting the oil for the following:
Rather than 3 Teaspoons of vegetable oil, substitute any of the following:
- 1 banana
- 1/3 cup of apple butter or apple sauce
- 1/3 cup of regular sour cream
- 3 Teaspoons of cream cheese, regular
Adding grated fruit peeling to the muffin batter also adds flavor without adding fat or calories. Some of our favorite combinations include:
- dried cranberries, grated orange rind
- rum extract
- ground cinnamon, golden raisins, chopped pecans
Thin Thin's Low Calorie Recipe for Basic Muffins

You will need:

1 egg (70 calories)

1/2 cup of whole milk (80 calories)

3 Teaspoons of Vegetable Oil (180 calories)

1 cup of all-purpose Flour (400 calories)

1/4 cup of Splenda (0 calories + if you desire a sweeter muffin, add more Splenda. If you don't like sugar substitute, use sugar instead for an additional 200 calories.)

2 Teaspoons of Baking Powder

1/2 Teaspoon of Salt

1 Teaspoon of Vanilla Extract
Simply mix the above ingredients and pour batter into muffin cups which have been sprayed with cooking spray to prevent sticking. Bake in a preheated 425 degree oven for about 12-15 minutes (until muffins are done).
Serve with a bit of low calorie margarine, or plain.
Each plan muffin contains about 125 calories.
