Mycotoxins

What are Mycotoxins? Mycotoxins are the poisonous components manufactured by fungi (such as molds, yeast, and mushrooms) and are toxic when ingested in sufficient quantities.

Many of the foods that we eat are prime hosts for mycotoxins. Although the agricultural industry embraces caution to ensure that a minimal amount of the toxins enter the human diet, mycotoxins cannot be totally eliminated. Foods susceptible to mycotoxins include: mushrooms, corn, nuts and fruits.

A reaction to mycotoxins by the body might include liver toxicity and an interruption in cell activity.

Aflatoxins

Found in nuts, figs, spices and maize. Health impacts include cancer, particularly liver cancer.

Ochratoxin A and Sterigmatocystin

Health effects related to Ochratoxin A and Sterigmatocystin range from renal disease to cancer. Ochratoxin A and Sterigmatocystin can be found in the following foods: soy, rice, coffee, beans, some cereals, flour, olives, corn, figs, nuts and peas.

Patulin

Found in fruits, vegetables and cereals. Carcinogenic and may pose risk to the immune system.

Fusarium

Found in grains. Present health risk to nervous system.

Trichothecenes

Found in grains. Health risks include nausea, diarrhea and potentially, death.
