Delicious Lower Calorie Enchiladas - If you're a big fan of cheesy enchiladas yet not a big fan of the calories and fat grams contained therein, you'll turn your head twice and do a flip over our lower calorie, lower fat and yes - very cheesy recipe for enchiladas.

Our tasty recipe can be adapted to suit your personal taste, as well. If you enjoy chicken enchiladas - then by all means, add a bit of seasoned shredded chicken to the low fat recipe rather than black beans. Or, you may choose to add chopped black olives, sliced sauteed mushrooms, peppers or sun-dried tomatoes to your enchilada recipe.

In our Lower Calorie Enchilada Recipe we use a jarred cheese queso sauce found generally in the chip section at most local markets. There are 13 servings in a jar, each containing 40 calories for a total of 520 calories for the entire jar of cheese sauce. And a little goes a very long way!

Serve with a healthy addition of rice to the meal. For dessert, serve some healthy fresh pineapple or mango or papaya. It's all good and compliments the enchiladas well without adding a profuse amount of calories to the meal.

The following recipe for enchiladas makes 8 enchiladas and contains about 175 calories per enchilada. Two enchiladas makes a fine feast - even without the rice.

Recipe for Lower Calorie, Low Fat Cheese Enchiladas

8 flour tortilla shells (80 calories each)
1 jar of cheese queso sauce - mild, medium or hot (520 calories)
1 cup of black OR pinto beans - drained and rinsed (about 220 calories)
1 cup of chopped raw onions, any variety
1 cup of salsa
Cooking Spray

To prepare, cook the flour shells in a non-stick pan using cooking spray until desired texture is achieved. The more golden they are, the more crisp will be added to the enchilada.

Meanwhile, heat the queso sauce in the microwave until bubbly, as well as the beans to which the salsa has been added. Reserve about 1/2 of the queso which will be used to cover the enchiladas.

Fill each prepared shell with beans, chopped onion and queso sauce. Roll enchilada style and place into a baking pan. When all the enchiladas have been placed into the pan, cover with the remaining queso and some of the raw onion, if desired. Bake in a preheated 400 degree oven until the queso is bubbly. That's it! Very simple, very quick and very tasty!
