Can
Soy Lower Cholesterol?
This Portfolio was developed by
a Canadian
research team (working with the Almond Board of California, Unilever Canada
and Lublaw Brands), and is based on the theory that soy may help lower cholesterol.
Twenty-five volunteers were put
on the Portfolio Diet for a month and when cholesterol
levels were tested, the LDL was lowered up to thirty-five percent.
By the way, LDL represents the cholesterol
that poses risk to heart disease. In the volunteers, the HDL appeared unaffected,
remaining steady. Volunteers took Metamucil three times
per day in conjunction with the Portfolio Diet.
The volunteers that were placed on a standard
diet also received benefits, with LDL numbers falling up to twelve percent.
The Portfolio
is a filling diet - according to this sample menu:
Breakfast: oat bran, fruit, soy milk
Lunch: vegetarian chili, oat bran bread,
tomato
Dinner: vegetarian curry, soy burger, northern
beans, barley, okra, eggplant, cauliflower, onions, red pepper
For those individuals
seeking a reduction in LDL cholesterol, benefits may
be rendered by incorporating a diet rich in soy, including
grains, fresh vegetables and fruits. As always, please
