Reduced Calorie Vegetable Recipes for Weight Loss

Sauteed Mushroom & Onions - Enjoy 1 cup of mushrooms and 1 cup of onions sauteed in a non-stick pan cooked with butter flavored non-stick cooking spray.  Serves two for about 50 calories each.

Side Salad - 2 cups of the Following Mix - Field greens, shredded carrots, sliced cucumber, cherry tomatoes. Serve with Ken's Walnut Raspberry Dressing OR your favorite low calorie dressing. About 100 calories.

Green Beans Bathed in Butter - Cook 3 cups of your favorite green beans until hot then top with the following mix: that has been heated together:  2 Tablespoons of no calorie butter spray, salt, pepper, 1 teaspoon of red plum jelly.  Serves 3 for about 40 calories each.

'Fried' Tators - Coat skillet thoroughly with cooking spray.  Carefully slice potato into thin slices, then cook in skillet until they reach preferred doneness.  Salt, pepper. Makes 2 servings for about bout 60 calories each.

Big Ice Slaw - Shred wedge of cabbage and 1 carrot.  Add dash of celery seed, salt and pepper.  Add 1 Tablespoon of milk and 1 Teaspoon of golden raisins (optional).  Add Splenda to meet personal preference. Makes 2 servings for about 50 calories each.

California Gold Dust Salad - Start with 3 cups of field greens.  Add the following: a few cherry tomatoes, 1 teaspoon of golden raisins, 1/4 chopped apple with peel, 1 teaspoon of chopped walnuts, a few slices of cucumber, 1 shredded carrot, 1 ounce of shredded cheese and 1/4 cup of chopped roasted chicken breast.  Add salt and pepper if desired plus 1 serving of Ken's Walnut Raspberry salad dressing.

Pardner, no doubt that you jus' hit Diet Pay Dirt.  This salad is as big as the heart of California for about 300 calories.  Yee-ha!  Toss in your hat, your guns and your belt for this one.  We don't want folks gettin' too riled up over good diet food.

Arkansas Tator Salad - Cook 2 small potatoes in the microwave for about 5 minutes - or until just until soft but not on the verge of mush.  You want your spuds firm and hard, just like some other objects you may enjoy.  Cool, then remove peeling from tators.  Cut into bite-sized chunks and mix with the following: 2 Tablespoons of LIGHT Mayo, 1 teaspoon of pickle relish, 1 Tablespoon of prepared Mustard. Optional: a teaspoon of pimentos which adds color and taste to tator salad.  Top with a shake of paprika if desired.  Serves two for about 150 calories each.

Delaware Diet Diamonds - Coat skillet thoroughly with cooking spray.  Carefully slice medium sized yam into thin slices, then cook in skillet until they reach preferred doneness.  Spray with no calorie butter while still hot. Salt, pepper and sprinkle with ground cinnamon. Makes 2 servings for about bout 60 calories each.
