Michigan Omelet - The Wake - We have named our tasty diet omelet The Wake because it will wake up even the deadest of diets.   You can use egg substitute and save a bunch of calories and cholesterol but we have chosen to use real eggs in The Wake.

You'll need: 3 egg whites and 1 egg yolk, 1/2 cup of skim milk, sauteed mushrooms (1/4 cup), sauteed onions (1/4 cup), sauteed bell pepper (1/4 cup), salt, pepper, 1 thin slice of baked ham (25 calories per slice - and cut ham into small pieces)  and 1 ounce of Velveeta cheese (80 calories) - grated or chopped into small pieces so that you can place on omelet with ease for easy melting.   Whisk eggs, milk, salt and pepper  until fluffy pour into non-stick skillet sprayed with butter flavored cooking spray.   Allow eggs to cook on bottom side, then carefully turn.   Use more cooking spray if necessary but be careful not to spray into burners - particularly open flames.

Top with all the remaining ingredients, placing them to one side.   Fold.   Serves one for about 300 calories.

Dessert - Cool Whip Diet Fluff - Remove 1/4 of an 8-ounce container (thawed) of fat-free Cool Whip, carefully placing it a mixing bowl.   Next, add 1 Tablespoon of your favorite creamer (Coffee Mate tastes wonderful and can be found in the dairy isle by the milk).   Also add 1-2 Tablespoons of Splenda.   Carefully stir and enjoy for about 145 calories.
