Nevada Cheesy Chicken & Rice - Ingredients: 1/2 cup of cooked rice 3 ounces of roasted chicken breast cut into bite-sized pieces 1/4 cup of sauteed diced bell peppers, 1/4 cup of diced sauteed onions, 1/4 cup of sauteed sliced mushrooms, 1 Tablespoon of chili powder, salt, pepper, 1/2 cup of cooked broccoli florets, 1/4 cup of finely grated carrots, 1 ounce of Velveeta cheese (80 calories) cut into bite-sized pieces and 1/4 cup of skim milk.
Place all ingredients into a non-stick skillet and cook until warm and cheesy. Serves one for about 400 calories.
Dessert - Enjoy sugar free gelatin for about 10 calories per serving.
