Arizona - The Grand Canyon State, The Apache State.   Our free diet menu for Arizona salutes the marriage of south meets west.   The southwestern food far  unites with a climate that is ripe for dude ranches and nature explores.

To reflect the diverse culture and food fair of Arizona we have taken to the outdoors - by a 'ready' campfire. Grab that hat, nestle those  alligator feet in some lizard-skinned boots and don't forget your spatula.   We're about to ride hard and live long with this tasty Southwestern menu that is low in calories and low in fat.   Yee-ha! Our Weight Loss Diet Formula.

Free Arizona Diet Menu - Total Calories 345

Arizona Gaucho Nachos - Mission tortilla chips - the round variety - about 20 chips (280 calories).   Smear each chip with a mix of the following: 1/4 cup of refried beans, 1 small sauteed chopped onion, 1 Tablespoon of chili powder, one-half teaspoon of cumin (optional) and a bit of fresh chopped cilantro (optional).   Warm chips by the campfire by placing foil in an iron skillet and laying chips on top.   Be careful not to burn the chips and yourself.  

 

Heat the following over the campfire OR in your microwave: 3 ounces of Velveta cheese (240 calories), 2 Tablespoons of your favorite salsa and one-half cup of skim milk (40 calories).   Heat until melted.   Pour over chips.   Add chopped jalapeno peppers if desired.

Serves 2 for about 300 calories each.   Top with light sour cream if desired, but be certain to count extra calories.

Arizona Tortilla Soup - Mix together the following ingredients in a thick soup pot and heat until hot: 1 can of clear chicken broth, 2 Tablespoons of fresh cilantro, 1 small diced onion, juice of one small lime, cracked pepper. Cook until onions are tender add 3 ounces of diced boned breast of chicken (about 140 calories)  and 1 small can of  Mexican style variety diced tomatoes.  

Serves 2 for about 100 calories each.   Add a bit of mozzarella cheese and crumbled tortilla chips for additional calories if desired.

Dessert - Enjoy 1 cup of fresh strawberries sprinkled with Splenda. About 45 calories.   Add a couple Tablespoons of light whipped topping if desired but be sure to add on calories to meal.
