Diet Macho Nachos - Keep in mind that most all chips contain about 15 calories each unless they are light or of very small Chip Statue.
Take 10 large tortilla chips and arrange on a plate. Next, heat up 2 ounces of Velveeta cheese (80 calories per ounce) that has been mixed with 1/4 cup of skim milk and 1/4 cup of picante sauce. Allow to cool a bit before pouring over tortilla chips. As it cools, it will thicken. If it doesn't thicken to your preference, add a bit more cheese. Pour over nachos. Serves one for about 340 calories.
Enjoy 1/2 cup of Mexican Rice - Cook 1/2 cup of instant rice as directed on box and add the following: 1/4 cup of sauteed onions, 1/4 cup of sauteed green bell peppers, 1 Teaspoon of chili powder, 1 Tablespoon of picante sauce. Serves one for about 125 calories.
Dessert - Enjoy sugar free gelatin for about 10 calories per serving.
