Diet Menu - Total Calories 450
Orange
Chicken, Diet Style - Coat skillet thoroughly with
cooking spray. Carefully place boned chicken breast
(6 ounces) into skillet and cook until done. Remove
place on 1 cup of cooked linguine. Top with the
following mixture that you have warmed: juice of one
orange, 1/2 teaspoon of grated orange rind, dash of
ground ginger, dash of ground nutmeg. 1-2 Tablespoons
of Splenda if more sweetness is desired. Remove
from heat and pour glaze over chicken. Top with
mint sprig if desired. Serves 2 for about 275
calories each.
Hurricane
Vegetable Mix - Stir fry the following fresh
vegetables (total of 4 cups) in a non-stick skillet
sprayed with non-stick cooking spray: 1/2 cup of sliced
mushrooms, 1/2 cup of broccoli, 1/2 cup of sliced or
diced onions, 1/2 cup of shredded carrots. Serves
2 for about 100 calories each.

- Hurricane Hula - Enjoy 1 cup of frozen
sliced peaches blended with 1 cup of skim milk plus
2 Tablespoons of Splenda, and 1 teaspoon of rum extract.
